Ingredients:


For the cake:

  • - 2 cups all-purpose flour
  • - 1 cup granulated sugar
  • - 2 teaspoons baking powder
  • - 1 teaspoon salt
  • - 1 cup whole milk
  • - 2 large eggs
  • - 2 tablespoons orange zest
  • - 2 tablespoons orange juice


For the cranberry compote:

  • - 12 oz (3 cups) fresh or frozen cranberries
  • - 1 cup granulated sugar
  • - 1/4 cup orange juice
  • - 1/4 cup water
  • - 1 tablespoon grated orange zest


For the whipped cream:

  • - 1 cup heavy cream
  • - 2 tablespoons granulated sugar
  • - 1 teaspoon vanilla extract


For the assembly:


  • - 1 cup orange segments (fresh or canned)
  • - 1 cup shredded coconut (optional)


Instructions:



Step 1 :

Preheat oven to 350°F (180°C). Prepare the cake and bake according to the recipe.

Step 2 : 

Prepare the cranberry compote by combining cranberries, sugar, orange juice, water, and zest in a saucepan. Bring to a boil, then reduce heat and simmer until cranberries pop and the mixture thickens.

Step 3 : 

Prepare the whipped cream by beating heavy cream, sugar, and vanilla extract until stiff peaks form.

Step 4 :
